About Nice Cooking

Nice Cooking started in 2005 as a small bilingual site about the cooking of Nice — la cuisine niçoise — and the Comté de Nice, the mountainous country between the Var river and the Italian border.

Today the site is rebuilt and written by the Nice Cooking kitchen. We cook every recipe we publish, explain why each step matters, and keep to the local way of doing things: raw vegetables in the salade niçoise, no cream in the pistou, olive oil everywhere.

How we write recipes

• Every recipe is published in English and French.
• Quantities are given in metric with common US equivalents.
• We cite the tradition, not a single “authentic” version: families in Nice all have their own.
