Cooking time : 1 hour 30 minutes (minimum)
Ingredients for 8 people :
800 grams of pork loin.
2 large onions.
1 litre of milk.
1 branch of sage (12 leaves).
Salt and pepper.
On your work top rub into the pork a mixture of salt and pepper ensuring that it penetrates well.Seal it in olive oil at a high heat with the onions cut into quarters. As soon as the onions start to brown add the litre of milk and the twig of sage Leave it to simmer at a low heat until the milk has completely evaporated and put the lid back on the pot at the end of the cooking. Add a little milk if necessary.
This is a recipe using milk, and therefore originates in the mountains, and which will be really best appreciated in cold weather.
