Spaghetti cooked with young courgettes

(Pâtes aux petites courgettes de Nice) – Li pasta ai courgèta

Cooking time : 10 minutes for the courgettes

Ingredients for 4 people :

200 grams of spaghetti.
4 young courgettes-fleurs from Nice.
Butter or oil.
Parmesan.

Cut the little courgettes into slices of about 1 cm and put them into cold water destined to cook the pasta.
At the start of boiling add the chopped flowers (without their pistil) and continue cooking the pasta.
Drain the pasta and the courgettes thus cooked together; season with butter or olive oil.
Present them in a nice earthen-ware dish and when you are ready to serve them add the parmesan.
The guests may add ground pepper from the pepper-mill as they wish.
At the start of summer, with a slice of raw ham and a glass of cool rosé, this becomes a complete meal, which is delicious and easy to prepare.
